Omlets in a Bag


Ingredients:
2 Eggs
2 Slices Ham, chopped
½ Cup Shredded Cheddar
1 Tablespoon Chopped Green Onion
1 Tablespoon Chopped Green Bell Pepper
2 Tablespoons Chopped Fresh Tomato
1 Tablespoon Chunky Salsa
2 Fresh Mushrooms, sliced

Method:

Crack the eggs into a large resealable freezer bag. Press out most of the air, and seal. Shake or squeeze to beat the eggs. Open the bag, and add the ham, cheese, onion, green pepper, tomato, salsa, and mushrooms (ingredients are optional and can be added to taste). Squeeze out as much of the air as you can, and seal the bag.
Bring large pot of water to a boil. Place up to 8 bags at a time into the boiling water. Cook for exactly 13 minutes. Open the bag, and let the omelet roll out onto a plate. The omelet should roll out easily.

Sophie Voncille Thurston: My first Grandaughter

My daughter recently had her second baby! :) I'm a grandmother for the second time. It's kind of a crazy thought, but I'm slowly getting used to it.

Anyways....

Sophie was born on March 6, 2009 at 3:07 p.m.

She weighed 6 lbs 15 oz
and 19 1/2 in

She is absolutely adorable and we ALL love her SOOO much. :)

St. George: The Swing Jumping Contest!

A few weeks ago, my family and I went down to St. George for another one of my daugther's many soccer tournaments. (A special thanks to Sylva and Rullon, my husbands parents, who let us stay with them!) While we were down there, we definately enjoyed the warm, sunny weather! (Seeing as it was extremely cold here in American Fork...but it's warming up pretty quickly.) Anyways, right before we started our journey home, we all went down to the park behind my parent's-in-law's house and just PLAYED! My kids had obviously missed being outside...as we were out playing, we did a number of fun activities. We played basketball, we played on the park, AND we had a "swing jumping contest." (Which was started by my competitive husband.) Let me explain:

You swing as HIGH as you can, and then...you jump! You try to land the farthest distace away from the swing as possible. My husband, Dale, started the whole competition. He jumped from the swing, and challenged my daughters to beat his record. One of my competive young daughters, CaLea, simply had to beat her father's record. She jumped, and she beat it! As you can probably predict, this competition went on for quite some time. The *RECORD LINE* kept moving further and further out. To tell the truth, I don't even know who won. Oh well, we got some pretty fun pictures though!! Enjoy!
